Kombucha making is super easy. Yes, it might seem a little overwhelming in the beginning, but that's with everything new in life right? With the right guidance and right equipment, you can master the art of Kombucha making in no time.
What you need is a high quality SCOBY(Symbiotic culture of bacteria and yeast), a glass jar, some good quality sugar and tea, a cloth to cover the jar and some water. That’s it. Once all ingredients are mixed as per instructions, the jar has to be kept aside for 7-10 days. This is called first fermentation. After 7-10 days, the Kombucha is ready and you can start consuming it.
Some people like to go one step further and do second fermentation. In this process, you transfer the prepared Kombucha in airtight bottles and add fruits or herbs to it. Equipments and Ingredients (Makes 2 L Kombucha)
- Glass jar - Atleast 2.5 liter capacity
- Kombucha SCOBY
- Kombucha starter tea 250 ml ( The liquid in the pouch along with SCOBY)
- Sugar - 100 gm or 3/4th cup ( Regular white or brown sugar)
- Black/Green tea - 20 gm or 1 tbsp or 4 tea bags
- Tight weave cotton cloth
- Rubber band
- Filtered/RO water - 1.7 litre/ 7 cups
Brewing process
- Wash your hands thoroughly and wash the jar and entire work area with hot water
- Boil 7 cups water. Remove from heat and add tea/tea bag
- After 15 min, strain the tea (or remove the tea bag)
- Now add the sugar and stir to dissolve
- Wait for it to completely cool down to room temperature (You can cover it while it is cooling to ensure no impurities enter)
- Pour the prepared sweet tea into the jar and empty entire SCOBY pack into the jar
- Wipe the jar's mouth and sides with tissues or clean napkins. This will remove any remains of sweet tea and won't attract insects
- Cover with cotton cloth and secure with a rubber band
- Allow it to brew for 7-10 days
- From day 7 onwards, start tasting. When the taste is to your liking- your Kombucha is ready !
- Reserve 250 ml/ 1 cup Kombucha (or more if you plan to make larger batch) along with SCOBY for your next batch of fermentation
- Enjoy the rest of the Kombucha as it is or go for second fermentation!
