Beet-Sauerkraut soup

Who said healthy cant be tasty? We are sticking to our roots making this recipe. Most Indian household’s practise - oil, whole spice, garlic, potato, tomato, and a secret ingredient.  

Ingredients :

  • 2 tbsp olive oil 
  • 1 bay leaf
  • 4 cloves garlic
  • 1 onion 
  • 1 potato,
  • 1 tomato
  • 1 cup Beet sauerkraut 
  • 2 cups water
  • 2-3 fresh dill sprig (optional)
  • Cream (optional)

Method:

  • In a pressure cooker, heat oil
  • Add bay leaf, garlic, onion and cook for 2 minutes
  • Add tomato and cook for another minute
  • Add potato, water and pressure cook for 4 whistles 
  • Let the mixture cool
  • Once cooled, remove the bay leaf and add 2 tablespoons beet-carrot Sauerkraut 
  • Grind the mixture and heat again as desired 
  • Garnish with dill leaves and cream
