Kottu Paratha with Sauerkraut

1 Idly, Vada, Dosa, Sambar… South Indian! Give in to the craving by trying out this simply outstanding way of transforming leftover chapatis. You might end up leaving over some intentionally to make this dish the next day! Just saying.

Ingredients: 

  • 2 - leftover chapatis
  • 1 cup - cooked mixed vegetables (potato, carrot, beans, peas, cauliflower)
  • 1/2 cup - tomato, chopped
  • 1/2 cup - onion, sliced
  • 1/2 cup - salt to taste
  • 1 cup thick coconut milk
  • 1 tsp - ginger, minced
  • 1 tsp - garlic, minced
  • coriander leaves to garnish
  • 1 tbsp Desi Sauerkraut 

Method:

  • Heat the oil in a fry pan. Fry onion, ginger and garlic till fragrant
  • Add tomato and cook till tomato is reduced to a pulp
  • Add vegetables and mash lightly with the ladle
  • Add coconut milk, sauerkraut and salt if needed
  • Break the chapathi into small pieces and add to the pan
  • Saute for 2 mins and serve at once, garnished with coriander leaves
