This soup feels not less than a warm comforting hug. But trust us, cold weather would just be an excuse, this wellness loaded soup full of veggies will be your go to! Sauerkraut in your soup is the new icing on the cake!
Ingredients
- 1 carrot or 50 gm, sliced
- 1/2 capsicum or 30 gm, sliced
- 3-4 beans or 20 gm, chopped small
- 1/2 tbsp or 2 gm Ginger garlic paste
- 4 cups water
- 4-5 chopped mint leaves
- 2 tbsp or 10 gm, chopped Spring onion
- 2 tbsp chopped coriander
- 2 tbsp or 30 gm classic sauerkraut
- Olive oil 2 tbsp
- 1/2 tbsp pepper
- 1 tbsp vinegar
- 1 tbsp chilli flakes
- 1 tbsp corn flour
- Salt to taste
Method:
- Heat oil in a pan and add ginger-garlic paste. Cook for 1 minute
- Add carrot, capsicum, beans and mix
- Add 3 cups water and cover to boil for 5 min
- In a small bowl, take one tbsp corn flour, 1/4th cup water and mix to make a slurry
- Slowly add the slurry in the boiling soup while stirring and boil for another 2 minutes till soup thickens
- Add vinegar, pepper, chilli flakes, mint, coriander, spring onion and boil for 2 more minutes
- Transfer the soup in the serving bowl
- Add two tbsp classic sauerkraut, mix and serve
Notes:
Taste and add salt if needed. We did not add salt in the recipe since Sauerkraut contains salt.
Adding the sauerkraut in the end will ensure it remains crunchy and its probiotic properties are intact
