Oats Sauerkraut Upma

We look for different ways to put together wellness and taste. Oats is one of the few foods that contain resistant starch. Resistant starch provides food for the good bacteria in the large intestine that is responsible for multiple functions of our body. 

Ingredients (serves 2):

  • 1 cup Oats 
  • 2 medium-sized onions 
  • 1 inch ginger grated 
  • 2 green chili 
  • 1 teaspoons mustard seeds
  • 1 teaspoon whole Cumin 
  • 2 tsp extra virgin olive oil 
  • Salt to taste
  • 2 cups water
  • Half cup peas
  • Half cup chopped carrots
  • half cup chopped beans 
  • Handful of coriander leaves
  • Handful of curry leaves
  • Desi sauerkraut 2 tbsp

Method:

  • Peel, wash and chop all the vegetables and keep them aside.
  • Heat oil on medium flame in a pan. Add mustard seeds, cumin seeds and curry leaves. Let them crackle
  • Add chopped onion and fry till golden brown. Now add green chili, grated ginger and fry for 4 to 5 minutes.
  • Add chopped vegetables and water. Cover and let it boil for 5 min
  • Once vegetables are slightly cooked, add oats and salt and mix well
  • Cover the lid of the pan and cook until the oats are cooked
  • Lastly, add desi sauerkraut, mix and garnish with coriander leaves
