This was everything I needed to make my first buch! After about 3 weeks, we’ve been drinking great kombucha! It’s been a fun process with a really enjoyable payoff. Good kit.

 The kit is fantastic, GutBasket has included all the equipment and Scoby needed to brew amazing batches of kombucha.

You could include a siphon tube to your order on Amazon to transfer the kombucha into bottles. This will make your life much easier.

I'd recommend that you order 3 more glass bottles if you intend to brew all 4 liters from a batch as this will give you flexibility to experiment with more flavors and will fit all the kombucha that you brew into glass bottles. 4 liters kombucha = 5 bottles since you'll be using fruit which occupies space in the bottles to flavor the kombucha.

TEA BREWING:

I'd recommend that you start by learning to optimize tea brewing time to hit the sweetspot as this takes some getting used to. You'll get a feel for your preference in a couple of brews. I'm still perfecting brewing time as I'm experimenting with a lot of different tea's.

PRIMARY FERMENTATION:

I had to adjust the fermentation times to the climatic conditions in south india. Found that 4-5 days in 28 degree temperature is ideal. Chances of your brew turning very sour are high if you do not keep checking after 5 days in 28 degree temperatures. Remember that you'll be doing secondary fermentation of 3 days with fresh fruit to extract flavour so a total of 8 days fermentation.

In any case, do experiment and see what you prefer. I like mine on the slightly sweeter side. So 5 days primary is good for me.

SECONDARY FERMENTATION:

DO NOT FORGET TO BURP - Burp once everyday. But, to preserve carbonation, what I found is that you can refriegerate for 3-4 hours on the 3rd day of secondary fermentation before opening and transferring your brew into drinking bottles. This will reduce the carbonation loss.

I found that storing your kombucha for 3 days in the fridge in smaller bottles before use gave me the perfect results i was looking for!

Taste is great. Still looking for a starter black tea with similar quality. You will need one more 1ltr bottle for second fermentation.

After making my first batch of kombucha, i thought something went wrong and the scoby was having mould. I contacted them and they took me through the whole process, post which i understood where i went wrong. Just to make sure i can make kombucha again and enjoy the whole process, they sent me a scoby free of cost. They value every feedback and are there at every step to help you out.
