Probiotic Aam Panna
Probiotic Aam Panna is a tangy, sweet-sour fermented drink made with raw mango, jaggery, and spices — a timeless Indian summer cooler reimagined for your gut health.

Ingredients

- 2.5 cups (300 g) chopped raw mango (with skin)
- 75 g jaggery powder
- 1 tsp roasted cumin powder
- 1 tsp black salt
- 18 g sea salt (for fermentation)
- 1 twig fresh mint leaves
- 1.8–2 L filtered water
Method
Step-by-step.
- Prepare the Ingredients. Wash the raw mangoes and mint leaves thoroughly. Chop the mangoes (with skin) into small pieces.
- Add to the Jar. Place the chopped mango and mint leaves in a clean 2L glass fermentation jar.
- Mix the Dry Ingredients. In a small bowl, combine jaggery powder, roasted cumin powder, black salt, and sea salt. Pour in 1.8–2 L of filtered water, leaving about 2 inches of headspace at the top to allow gases to build during fermentation. Add the mixed dry ingredients and stir well to dissolve.
- Seal with an Airlock. Close the jar with an airlock lid (or loosely cover if you don’t have one). Fill the airlock halfway with clean water so gases can escape safely without letting air or contaminants in.
- Ferment Naturally. Keep the jar at room temperature (22–30°C) for 2 days. Shake gently once a day. Taste after Day 2 — it should be tangy, lightly fizzy, and refreshing.
- Strain and Chill. Once fermented to your liking, strain the liquid into a clean bottle or jug. Refrigerate immediately.
- Serve Cold. Serve chilled with ice or a sprig of fresh mint for a rejuvenating, gut-friendly summer drink.
