Carrot-Peas Ferment
Carrot peas ferment is crisp, mildly sweet, and gently spiced with ginger and garlic.

Ingredients
Everything you need.
- 300 g sugar snap or snow peas
- 300 g carrots, cut into sticks
- 25 g scallion, thinly sliced (about 1 medium)
- 2 cloves garlic, minced (about 6 g)
- 1 tbsp. freshly grated ginger (about 10 g)
Method
Step-by-step.
- Prepare the Vegetables. Wash the peas and carrots thoroughly. Cut carrots into even sticks. Slice scallions and mince the garlic. Grate the ginger fresh.
- Sterilize the Jar. Clean your 1L fermentation jar with hot water and let it dry completely before use.
- Pack the Jar. Add the peas, carrots, scallion, garlic, and ginger into a clean 1L fermentation jar and press down firmly to remove air pockets.
- Add Glass Weight. Leave about 2 to 3 cm headspace and place a glass weight on top to hold the vegetables in place.
- Add Brine. Dissolve 20 g of salt in water until fully mixed. Pour the brine into the jar until the vegetables and glass weight are fully submerged.
- Seal and Ferment. Close the jar with the grommet lid and airlock. Keep at room temperature, away from direct sunlight, for 6 to 8 days.
- Check for Readiness. Check after Day 6. The ferment should smell tangy, gingery, and slightly earthy.

- Begin tasting around Day 6. It is ready when tangy with a warm spice note from ginger. Remove the glass weight, stir gently, and refrigerate.
- Keeps well refrigerated for up to 6 to 9 months.
- Brine ratio: If you need to create extra brine, follow the ratio of 2g salt to 100ml of water for a balanced ferment.
