Ingredients

Everything you need.
  • 900 g fresh spinach leaves, washed and chopped
  • 1 large sweet onion, thinly sliced
  • 1½ tsp unrefined sea salt
  • 1 tbsp dried oregano
  • 2 tbsp fresh lemon juice

Method

Step-by-step.
  1. Prepare the Onions. Add the sliced onions to a large bowl and sprinkle the salt over them. Let them sit for 30 minutes until they soften and begin releasing brine.
  2. Sterilize the Jar. Clean your 1L fermentation jar with hot water and let it dry completely before use.
  3. Massage. Massage the onions well to help draw out more moisture.
  4. Add Spinach and Flavorings. Add the chopped spinach, dried oregano, and fresh lemon juice. Mix thoroughly so everything is evenly coated.
  5. Pack the Jar. Transfer the mixture into a 1L fermentation jar. Press down firmly to remove air pockets and help natural brine rise.
  6. Add Leaf and Weights. Place a cabbage leaf on top to cover the surface. Add a glass weight to keep the greens submerged.
  7. Seal and Ferment. Close with a grommet lid and airlock, fill it halfway. Ferment at room temperature for 5 to 7 days, away from direct sunlight.
  8. Check for Readiness. As it ferments, the greens will darken slightly, and the aroma will turn tangy and fresh. Once bright, lightly sour, and aromatic, it is ready.
  9. Store. Remove the glass weight, seal with a regular lid, and refrigerate.
