Beet Kvass
A traditional Beet Kvass recipe made with beetroot, salt, and water. Naturally fermented and probiotic-rich, this earthy drink is simple to make and an easy addition to your daily gut health routine.

Ingredients
Everything you need.
- 200 g beetroot, unpeeled and cut into thick sticks
- Around 1.8 L filtered, non-chlorinated water
- 40 g non-iodised sea salt

- 2L glass fermentation jar
- Grommet lid and airlock
Method
Step-by-step.
- Prepare the Beetroot Wash. Don't peel the skin, and cut the beetroot into thick sticks.
- Sterilize the Jar Clean your 2L fermentation jar with hot water and let it air dry completely before use.
- Combine the Ingredients Transfer the beetroot into the jar. Add the 40 g sea salt, then pour in the water, leaving about 2 inches of headspace. Stir well until the salt has completely dissolved.
- Seal with an Airlock Close the jar with the grommet lid and attach the airlock. Fill the airlock halfway with clean water.
- Ferment Leave the jar at room temperature, away from direct sunlight, for 3 to 5 days.
- Taste and Store Start tasting from Day 3. Once the kvass has developed a pleasantly tangy, earthy flavour, strain the liquid into a clean bottle and refrigerate. Serve chilled.
