Ingredients

Everything you need.
  • 400 g carrots, peeled and cut into 2-inch finger-thick pieces
  • 100 g fresh ginger, peeled and cut into matchsticks
  • 450 ml filtered, non-chlorinated water
  • 19 g non-iodised sea salt

Method

Step-by-step.
  1. Prepare the Vegetables Wash and peel the carrots, then cut them into 2-inch finger-thick pieces. Peel the ginger and slice it into thin matchsticks.
  2. Sterilize the Jar Clean your 1L fermentation jar with hot water and let it dry completely before use.
  3. Pack the Jar Arrange the carrots and ginger in alternating layers inside the fermentation jar - ensure carrots form the top layer, packing them tightly.
  4. Add the Glass Weight Place the glass weight on top to keep the vegetables submerged during fermentation.
  5. Prepare the Brine In a jug, dissolve the 19 g non-iodised sea salt in 450 ml filtered, non-chlorinated water.
  6. Add the Brine Pour the brine into the jar until the vegetables and glass weights are completely covered, leaving about 2 inches of headspace.
  7. Seal Close the jar with the grommet lid and attach the airlock. Fill the airlock halfway with clean water.
  8. Ferment Leave the jar at room temperature, away from direct sunlight, for 3 to 6 days.
  9. Taste and Store Start tasting from Day 3. Once the vegetables have developed a pleasant tang and are still crisp, move the jar to your refrigerator.

  • During the monsoon, ferment in a clean, dry spot away from damp walls or direct humidity.
  • Always keep the vegetables completely submerged beneath the brine.
  • Use filtered, non-chlorinated water and non-iodised sea salt for reliable fermentation.
  • Store refrigerated after fermentation and enjoy over the next 2 to 3 months.
